Low Oxalate Recipe: Coconut Macaroons

The release of my cookbook is almost here and I’m so excited to share this with you! This cookbook features super easy recipes that are quick and hassle-free. I created this cookbook so those watching their oxalates can have one place to find information and recipes. 

My book takes the guesswork out of what you can and cannot eat if you are gluten-free and low-oxalate. 

I also avoid soy, nuts, yeast and white sugar in the cookbook.

Here’s a recipe from the cookbook for Coconut Macaroons. 

I absolutely love these any time of day. 

Once I start eating these, I cannot stop.

Get out these tools: mixing bowl, medium-sized bowl, beaters, wooden spoon, cookie sheet, parchment paper

Ingredients

3 egg whites

2  1/2 cups unsweetened flaked coconut

1 tsp vanilla extract

5-10 drops of stevia extract

Line cookie sheet with parchment paper. Preheat oven 325*.

With beaters, mix egg whites with stevia and vanilla until egg whites foam and get stiff.

Add coconut and mix thoroughly.

Drop by rounded teaspoon on cookie sheet and bake for twenty minutes, until tops of cookies start to brown.
