I think the topic of histamines in our health is really important to bring up. I was diagnosed with having extremely high histamine levels and I blew off the diagnosis because I don’t really have allergy symptoms. But I was wrong!
Because of my anti-candida diet, I have been eating a lot of animal proteins, not my favorite. I like turkey sausage and bacon so I was eating those almost daily. Then I wondered why my bladder was bothering me so much (always having to pee, always feeling like I have to pee) and I had heart palpitations.
I starting looking at the foods that increase histamines and what do you know? I was raising my levels with the bacon and the turkey sausage as well as the salami was eating with a little cheese.

The way I understand histamines is like a bucket, you can tolerate so much until the bucket is full and then you begin having symptoms. You need to stay off the histamines (empty the bucket) to get better and then eat them sparingly, this is what I am doing with oxalates too. I just bought a supplement called UmbrellexDAO to help with my histamine levels as well as Quercetin.
Histamine intolerance is not a sensitivity to histamine, but an indication that you’ve developed too much of it. Histamine is a chemical in your body responsible for a few major functions:
- As a neurotransmitter, histamine communicates messages to your brain.
- Histamine is a component of stomach acid that helps to break down your food in the digestive process.
- Histamine is released after injury or allergic reaction as part of the body’s immune response.
When histamine levels get too high or when histamine cannot break down properly, it can affect your normal bodily functions.
The enzyme diamine oxidase (DAO) is what breaks down the histamines but in some people, like me, are deficient in it. There is a link between histamine and candida as well as oxalates. Candida triggers something in the cells and inflammatory responses ensue.
When I talked to my doctor about my various issues (adrenal fatigue, candida, pyroluria, not breaking down oxalates, high histamine, IC) she said the common denominator is…drumroll….contain your shock…STRESS. The topic of stress/worry/anxiety is a whole other post but let it be known that an inability to handle stress is responsible for chronic conditions and disease.
Going on a low-histamine, low carb diet is what I am doing right now as well as taking the UmbrellexDAO and quercetin, I also watch oxalate levels and consume high oxalate foods sparingly.
